Ingredients
- 3 pounds stew meat (beef or lamb)
- 1 onion (roughly sliced)
- 4 medium carrots (peeled and cut into 1-2” pieces)
- 2 pounds small yellow potatoes (cut in half)
- 1–1/2 cups Guinness beer
- 4 cups beef broth
- Sea salt and pepper (to taste)
Instructions
- Preheat your oven to 320°F.
- In a Dutch oven over medium-high heat, add corn oil and brown the seasoned stew meat on all sides.
- Remove meat, drain excess grease, then sauté onions, celery, and carrots until translucent. Add garlic and cook for an additional minute.
- Return meat to the pot, stir in tomato paste and flour, then pour in beef broth and Guinness beer while whisking to combine.
- Mix in halved potatoes, bay leaves, thyme, cover tightly with a lid.
- Bake in the oven for 2-1/2 to 3 hours until beef is fork-tender.
- Discard bay leaves before serving; garnish with chopped parsley.
