- 2 eggs
- 50 g sugar (+2 tsp)
- 100 g savoiardi (ladyfinger biscuits)
- 2 tsp loose leaf Earl Grey tea
- 160 ml water

- Prepare the Sweetened Tea: Combine loose leaf Earl Grey tea and sugar in hot water. Steep for 20 minutes, strain, and discard leaves.
- Separate Egg Yolks and Whites: Place yolks in one bowl and whites in another; add half of the sugar to egg whites and beat until stiff peaks form.
- Mix Egg Yolks with Mascarpone: Beat yolks with remaining sugar until fluffy, then fold in mascarpone and beaten egg whites.
- Layering: Spread a layer of mascarpone cream in a dish, dip ladyfingers in sweetened tea, layer them over cream, and repeat.
- Final Layer: Finish with another layer of cream atop the last biscuit layer. Chill for at least 2 hours before serving.
