With its light texture and beautiful presentation, this tea-infused tiramisu captivates the senses while being surprisingly simple to prepare. Ingredients

Scale
  • 250 g mascarpone
  • 2 eggs
  • 50 g sugar (+2 tsp)
  • 100 g savoiardi (ladyfinger biscuits)
  • 2 tsp loose leaf Earl Grey tea
  • 160 ml water

Instructions

  1. Prepare the Sweetened Tea: Combine loose leaf Earl Grey tea and sugar in hot water. Steep for 20 minutes, strain, and discard leaves.
  2. Separate Egg Yolks and Whites: Place yolks in one bowl and whites in another; add half of the sugar to egg whites and beat until stiff peaks form.
  3. Mix Egg Yolks with Mascarpone: Beat yolks with remaining sugar until fluffy, then fold in mascarpone and beaten egg whites.
  4. Layering: Spread a layer of mascarpone cream in a dish, dip ladyfingers in sweetened tea, layer them over cream, and repeat.
  5. Final Layer: Finish with another layer of cream atop the last biscuit layer. Chill for at least 2 hours before serving.
