  • Cooking spray
  • Furikake, for garnish
  • 1 green onion, for garnish

Instructions

  1. Cook sushi rice according to package instructions.
  2. Combine rice vinegar and sugar in a microwave-safe bowl; heat until sugar dissolves. Mix with cooked rice.
  3. Preheat oven to 400°F (200°C).
  4. In a mixing bowl, combine cubed salmon with soy sauce, Kewpie mayo, sriracha, and sesame oil.
  5. Cut nori sheets into squares; lightly grease muffin tin with cooking spray.
  6. Assemble by placing rice in each nori square followed by the salmon mixture.
