  • 1 cup water
  • 6 oz imitation crab meat
  • 1 ripe avocado
  • 1 cucumber
  • 2 nori sheets (cut into strips)
  • Soy sauce (for serving)
  • Mayonnaise
  • Sriracha sauce

Instructions

  1. Rinse the sushi rice under cold water until clear. Combine with water in a pot, bring to a boil, reduce heat, cover, and simmer for 18 minutes.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold this mixture into the cooked rice once slightly cooled.
  3. Slice the avocado and cucumber thinly.
  4. In serving bowls, layer sushi rice first, followed by sliced avocado, cucumber, and flaked imitation crab.
  5. Garnish with nori strips and drizzle with soy sauce and spicy mayo made from mixing mayonnaise with sriracha.
