Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 1 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp salt
  • 4 garlic cloves, minced
  • 2 tbsp fresh ginger, grated
  • 1 can (15 oz) tomato puree
  • 1 cup heavy cream
  • 4 tbsp unsalted butter
  • 1 medium onion, chopped
  • 1 tsp sugar
  • 1 tsp chili powder

Instructions

  1. 1. Marinate the Chicken: In a bowl, mix yogurt, garam masala, cumin, turmeric, salt, minced garlic, and grated ginger. Add chicken thighs and coat well. Marinate for at least 30 minutes or overnight in the refrigerator.
  2. 2. Cook the Chicken: Heat oil in a large skillet over medium-high heat. Sear marinated chicken pieces until golden brown (about 4-5 minutes per side). Remove from skillet and set aside.
  3. 3. Prepare the Sauce: In the same skillet, melt butter over medium heat and sauté chopped onions until translucent (about 5 minutes). Stir in additional garlic and ginger; cook until fragrant (about one minute).
  4. 4. Combine Ingredients: Add tomato puree, sugar, and chili powder to the skillet. Simmer on low heat for about ten minutes until slightly thickened.
  5. 5. Finish the Sauce: Stir in heavy cream and remaining butter. Return cooked chicken to the skillet; let simmer gently for an additional five minutes.
  6. 6. Serve: Transfer to plates and drizzle with sauce before serving alongside basmati rice or naan.
