Instructions

  1. Heat oil in a large skillet over medium heat. Add the onion and sauté until soft, about 5 minutes. Stir in garlic and ginger; cook for an additional minute.
  2. Add curry powder, cumin, coriander, and turmeric; toast the spices for about 2 minutes.
  3. Pour in the diced tomatoes and coconut milk; bring to a gentle simmer.
  4. Add chickpeas, cover, and simmer on low heat for around 10 minutes.
  5. Season with salt and pepper to taste before serving over rice or naan.
