  • 1 lb ground beef (or turkey/lamb)
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 cup frozen peas and carrots
  • 3 large potatoes, peeled and chopped
  • ¼ cup milk (or plant-based alternative)
  • 2 tbsp butter (or vegan butter)
  • Shredded cheddar cheese (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the chopped potatoes in salted water for 10–12 minutes until fork-tender. Drain and mash with milk, butter, salt, and pepper until creamy.
  3. In a skillet over medium-high heat, cook the ground meat until browned. Add onion and garlic; sauté until translucent. Stir in peas, carrots, tomato paste, broth, Worcestershire sauce, salt, and pepper; simmer for 3–5 minutes.
  4. Grease a muffin tin. Spoon filling into each cup until about ⅔ full; top with mashed potatoes.
  5. Bake for 10–15 minutes until golden brown; optionally broil for an extra crisp top.
  6. Let cool slightly before serving.
