  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened (at room temperature)
  • 2 large eggs
  • 1 cup raisins (soaked in warm water for plumper texture)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, combine the oats, flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt.
  3. In another bowl, cream the softened butter with both sugars until light and fluffy. Add eggs one at a time until fully combined.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Gently fold in the raisins.
  5. Spread the mixture evenly into the prepared pan and bake for 25-30 minutes or until golden brown.
  6. Allow to cool completely before cutting into squares.
