  • 1/4 cup mayonnaise
  • 1 tsp chili powder
  • 2 tbsp lime juice (for extra zest)
  • Lime wedges, for serving
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Marinate chicken thighs in lime juice, avocado oil, chili powder, garlic powder, salt, and pepper for 15-30 minutes.
  2. Cook marinated chicken in a non-stick skillet over medium-high heat for about 8-10 minutes on each side until fully cooked.
  3. In a separate bowl, mix grilled corn with red onion (if using), sour cream, mayonnaise, cotija cheese, chili powder, salt, pepper, and lime juice.
