  • 1 medium cucumber, diced
  • 1 large bell pepper, diced
  • 12 medium carrots, shredded
  • ¼ medium red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ¾ cup peanut butter (creamy or crunchy)
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • Juice of 2 limes

Instructions

  1. Wash and prepare all vegetables: dice cucumber, chop bell pepper, shred carrots, and slice red onion.
  2. Cook edamame by boiling for about 4–5 minutes until tender; drain.
  3. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, and water until smooth.
  4. In a large mixing bowl, combine cooked edamame with prepared veggies and cilantro.
  5. Pour peanut sauce over the mixture and toss until well coated.
  6. Serve immediately or chill for an hour before serving.
