  • 1 eggplant (finely diced)
  • 1 cup sun-dried tomatoes (drained, oil reserved)
  • 1 shallot (finely chopped)
  • 3 garlic cloves (minced)
  • 1 cup puréed tomatoes
  • 5 ounces ricotta
  • ½ tsp crushed red pepper flakes
  • 1 tsp smoked paprika
  • salt (to taste)
  • black pepper (to taste)

Instructions

  1. Boil rigatoni in salted water until al dente. Reserve 1/4 cup cooking water and drain.
  2. In a skillet, heat oil from sun-dried tomatoes over medium heat. Sauté garlic and shallot until soft.
  3. Add diced eggplant; sauté until tender. Stir in sun-dried tomatoes and cook for an additional 5 minutes.
  4. Pour in puréed tomatoes; bring to a boil before reducing to simmer for 5 minutes. Season to taste.
  5. Mix in ricotta until combined, then add cooked rigatoni, adjusting creaminess with reserved pasta water if necessary.
  6. Serve hot, garnished with fresh herbs or cheese if desired.
