  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs
  • Extra Parmesan cheese
  • Crispy fried onions (optional)

Instructions

  1. Caramelize onions: In a skillet, melt butter and oil over medium heat. Add sliced onions, salt, pepper, and optional sugar. Cook until golden brown (15-20 minutes).
  2. Prepare potatoes: Slice Yukon Gold potatoes into rounds. Mix garlic powder, thyme, broth, cream, salt, pepper, and fresh thyme in a bowl.
  3. Assemble: Preheat oven to 375°F (190°C). Grease a cast iron skillet. Layer half of the potato slices, followed by half the onions and cheeses. Repeat layers.
  4. Bake: Pour the creamy mixture over the assembled dish. Cover with foil and bake for 45 minutes; remove foil and bake for another 15-20 minutes until bubbly.
  5. Serve: Let cool slightly before serving; top with crispy fried onions if desired.
