  • 1 ½ pounds skinless, boneless chicken thighs (cut into 1-inch pieces)
  • 2 calabresa sausages (sliced; substitute kielbasa or chorizo)
  • 1 cup white long-grain rice (rinsed)
  • 2 ½ cups chicken broth
  • ½ cup olive oil
  • 3 garlic cloves (peeled)
  • 1 onion (chopped)
  • 1 large carrot (finely diced)
  • 2 Roma tomatoes (chopped)
  • Salt, pepper, and spices (turmeric, bay leaves)

Instructions

  1. Chop onions, carrots, tomatoes, and rinse the rice until water runs clear.
  2. In a large pot over medium heat, add olive oil. Sauté chopped onion until translucent; add minced garlic until fragrant.
  3. Brown sliced sausages in the pot, then add chicken thighs. Season with salt, pepper, turmeric, apple cider vinegar, and parsley.
  4. Pour in white wine to deglaze the pot; simmer for three minutes.
  5. Stir in rinsed rice and chicken broth; add bay leaves and tomatoes. Bring to a boil.
  6. Reduce heat to low, cover tightly, and simmer for about 30 minutes or until rice is tender.
  7. Remove bay leaves before serving; garnish with chopped parsley.
