  • 1 tsp sunflower oil
  • 150 g diced chorizo
  • 1 small onion, finely diced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 ½ tbsp harissa paste
  • 1 tbsp tomato puree
  • 200 ml full-fat coconut milk
  • 150 g cherry tomatoes, halved
  • 500 g fresh gnocchi
  • 60 g baby spinach

Instructions

  1. Heat sunflower oil in a large frying pan over medium-high heat.
  2. Cook the chorizo for 3–4 minutes until it releases its oils; set aside.
  3. In the same pan, sauté onion, red bell pepper, garlic, salt, and black pepper for about 5 minutes until softened.
  4. Bring a large pot of water to boil for the gnocchi.
  5. Add harissa paste and tomato puree to the vegetable mixture; stir well.
  6. Pour in coconut milk and add cherry tomatoes; simmer for about 5 minutes.
  7. Cook gnocchi in boiling water according to package instructions until they float (about 2–4 minutes).
  8. Transfer cooked gnocchi directly into the pan with sauce using a slotted spoon; add spinach and return chorizo.
  9. Stir everything together for an additional minute until spinach wilts; serve hot.
