  • 1/2 cup whole wheat breadcrumbs

  • 1/2 teaspoon salt

  • 1 egg, beaten

  • 1 small cucumber, grated and excess moisture squeezed out
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper in a bowl. Refrigerate while preparing meatballs.
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, garlic, oregano, salt, pepper, and beaten egg. Mix gently until combined.
  3. Preheat skillet with olive oil over medium heat. Shape mixture into meatballs (about 1-2 inches) and cook for 6-8 minutes on each side until golden brown and cooked through.
