  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh or frozen)

Instructions

  1. Preheat the oven to 400°F (200°C). Pierce each sweet potato with a fork and place them on a baking sheet lined with parchment paper. Bake for 40–50 minutes until tender.
  2. While the potatoes bake, heat olive oil in a large skillet over medium heat. Sauté the onion for about 3–4 minutes until softened.
  3. Add garlic and bell pepper; cook for another 2–3 minutes.
  4. Stir in ground turkey, breaking it apart with a spatula. Cook until browned (6–8 minutes).
  5. Season with cumin, chili powder, salt, and pepper. Mix in corn and optional diced tomatoes; cook until heated through.
  6. Once baked, slice the sweet potatoes open lengthwise and fluff the insides with a fork before filling them with the turkey mixture.
  7. Top with optional cheese and return to the oven for an additional 5–7 minutes until melted.
