  • 2 teaspoons instant dry yeast
  • 2 cups warm water
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces Gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • Maldon sea salt flakes (for topping)

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast; let sit until frothy (5-10 minutes).
  2. Add flour, fine sea salt, and olive oil; mix until combined.
  3. Knead using a stand mixer on medium speed for about 10 minutes until smooth.
  4. Transfer dough to a greased bowl; cover and let rise in a warm place until doubled in size (1-2 hours).
  5. Grease a baking sheet with olive oil, then punch down the risen dough and stretch it onto the sheet.
  6. Cover again and let rise for another hour.
  7. Preheat oven to 425°F (220°C). Dimple the dough's surface, drizzle with olive oil, and top with Gruyère cheese, thyme leaves, and Maldon sea salt flakes.
  8. Bake for 25-30 minutes or until golden brown. Allow to cool slightly before slicing.
