- 1/2 cup plus 2 tablespoons extra virgin olive oil

- 7 ounces Gruyère cheese (cubed)
- 2 tablespoons fresh thyme leaves
- Maldon sea salt flakes (for topping)
Instructions
- In a mixing bowl, combine warm water, sugar, and yeast; let sit until frothy (5-10 minutes).
- Add flour, fine sea salt, and olive oil; mix until combined.
- Knead using a stand mixer on medium speed for about 10 minutes until smooth.
- Transfer dough to a greased bowl; cover and let rise in a warm place until doubled in size (1-2 hours).
- Grease a baking sheet with olive oil, then punch down the risen dough and stretch it onto the sheet.
- Cover again and let rise for another hour.
- Preheat oven to 425°F (220°C). Dimple the dough's surface, drizzle with olive oil, and top with Gruyère cheese, thyme leaves, and Maldon sea salt flakes.
