  • 1 pound elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ⅔ cup Guinness or other stout
  • 1 ½ cups 2% milk
  • ½ cup half and half
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon dijon mustard
  • 2 ounces cream cheese, cut into pieces
  • 3 ½ cups shredded cheddar (or another good melting cheese, divided)
  • 1½ tablespoons butter
  • 2 teaspoons finely minced garlic
  • ½ cup panko breadcrumbs
  • salt/pepper to taste
  • 2 teaspoons minced fresh parsley

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  2. In the same pot, melt butter over medium heat; stir in flour for one minute.
  3. Gradually whisk in Guinness, 2% milk, and half-and-half until thickened.
  4. Lower heat; add salt, pepper, dijon mustard, cream cheese, and shredded cheddar (reserve some for topping). Stir until melted.
  5. Mix cooked macaroni into the cheese sauce until well-coated.
  6. For the topping, sauté garlic in butter; add panko breadcrumbs until golden.
  7. Serve macaroni topped with toasted breadcrumbs and extra cheddar, garnished with parsley.
