- 2 pounds boneless beef chuck
- ¼ pound bacon
- 4 cups low sodium chicken broth
- 1 (12 ounce) bottle Guinness
- 3 large carrots
- 4 sticks celery
- 1 large onion
- 2 large potatoes or parsnips
- ½ pound cremini mushrooms (optional)
- 1½ cups self-rising flour
- ¾ cup shredded Irish sharp cheddar
Instructions
- Cook bacon in a large pot until crispy; crumble and set aside.
- In the same pot, brown seasoned beef chunks in bacon fat. Remove and set aside.
- Sauté onion, celery, and carrots until soft. Add garlic and tomato paste; cook briefly.
- Stir in Guinness and Worcestershire sauce; scrape up browned bits from the bottom.
- Return beef to pot with chicken broth, bay leaf, and thyme; simmer for 90 minutes.
- Add diced potatoes and turnip; simmer for another 30 minutes until tender.
- Thicken with cornstarch slurry if needed; stir in optional mushrooms.
- Prepare dumplings by mixing flour and garlic powder; add shortening and cheddar.
- Form small balls of dough; place on top of stew and bake at 350°F for 30-40 minutes.
