- 1/4 tsp salt
- 1 red bell pepper
- 1 orange bell pepper
- 1/2 red onion
- 1 cup pineapple chunks
- 1/2 cup Primal Kitchen Foods Hawaiian BBQ Sauce
- 1 tbsp avocado oil
- Juice of 1 lime
- Cilantro and white sesame seeds for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, season cubed chicken with salt, pepper, and avocado oil until well coated.
- Add diced bell peppers, red onion, and Hawaiian BBQ sauce; mix thoroughly.
- Spread the mixture evenly on the prepared baking sheet and bake for 20 minutes.
- After 20 minutes, add pineapple chunks and bake for an additional 10-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven, drizzle with lime juice, garnish with cilantro and sesame seeds, then serve.
