Description

Ingredients

  • ¾ cup rolled oats
  • 6 tbsp unsalted butter
  • ½ cup maple syrup
  • ½ cup unsweetened apple sauce
  • 2 large eggs
  • 1 cup finely chopped apple

Instructions

  1. Preheat your oven to 350°F and line a muffin pan with liners.
  2. In a bowl, whisk together whole wheat flour, rolled oats, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, combine melted butter, maple syrup, apple sauce, Greek yogurt, vanilla extract, and eggs until smooth.
  4. Mix the dry ingredients into the wet mixture along with chopped apples until just combined.
  5. Fill muffin liners evenly with batter and bake for 18-22 minutes until a toothpick comes out clean.
  6. Let cool for 5 minutes in the pan before transferring to a wire rack to cool completely.
