  • 1 pound ground lamb (or beef, chicken, turkey)
  • ¾ cup low-salt chicken broth (plus 1 cup for the casserole)
  • 3 tablespoons olive oil
  • 3 carrots
  • 1 large onion
  • 1 red bell pepper
  • 2 small zucchinis
  • 3 garlic cloves
  • Frozen peas and sweet corn

Instructions

  1. Prepare the Potatoes: Boil diced potatoes in salted water until tender. Drain, then mash with broth, olive oil, salt, and pepper.
  2. Cook the Meat: In a skillet, heat olive oil over medium heat. Cook the ground meat until browned. Remove excess fat.
  3. Sauté Vegetables: In the same skillet, add remaining vegetables and sauté until tender. Stir in broth, tomato paste, seasonings, and return meat to the skillet; simmer.
