- 1 whole chicken (divided into 8 pieces) or 4 skin-on chicken breasts
- 1 tbsp kosher salt (divided)
- 3 tbsp salted butter
- 1 cup brown mushrooms (halved)
- 3 shallots (diced)
- 3 cloves garlic (minced)
- 2 tsp fresh parsley (minced)
- 1/2 cup dry white wine
- 2 cups chicken stock
- 1 lb baby yellow potatoes (halved)
- 1/4 cup cream
Instructions
- Preheat oven to 325°F (163°C).
- Pat the chicken dry, season with salt and pepper, rubbing it under the skin.
- In a Dutch oven, melt butter over medium-high heat and brown the chicken on both sides for about 3–5 minutes each. Remove from pot.
- Sauté mushrooms, shallots, garlic, and celery in the same pot until softened; season with remaining salt and parsley.
- Sprinkle flour over the vegetables, stir well, then deglaze with white wine.
- Gradually stir in chicken stock until sauce thickens slightly.
- Add halved potatoes to the sauce, placing browned chicken on top.
- Roast in the preheated oven for about 40–45 minutes until internal temperature reaches 165°F (74°C).
- Let it rest for 10 minutes before serving.
