  • 1 medium zucchini, grated
  • 1 cup cheddar cheese (optional)

  • 1 teaspoon avocado or olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • A large handful of spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels, usually frozen (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast on a baking sheet for about 45 minutes until tender.
  2. In a skillet over medium heat, sauté chopped garlic in olive oil until fragrant. Add ground turkey; cook until browned.
  3. Stir in spices and diced tomatoes; mix well. Add grated zucchini and spinach; cook until wilted.
  4. Cut roasted sweet potatoes lengthwise; fill each with the turkey mixture. Top with cheese if desired and return to the oven for an additional 5–10 minutes until cheese melts.
