  • 110 grams almond flour (sifted)
  • 190 grams powdered sugar (sifted)
  • 10 grams unsweetened cocoa powder (sifted)
  • 120 grams heavy cream
  • 66 grams egg whites (room temperature)
  • 1/4 teaspoon cream of tartar
  • 133 grams granulated sugar
  • 57 grams dark chocolate (melted)
  • mini dehydrated marshmallows

Instructions

  1. Prepare your ingredients by measuring everything accurately.
  2. For the ganache filling, warm heavy cream and pour it over chopped dark chocolate; stir until smooth.
  3. Whip egg whites with cream of tartar until frothy, then gradually add sugar to form stiff peaks.
  4. Sift almond flour, powdered sugar, and cocoa powder together; gently fold into the egg whites.
  5. Pipe small circles onto baking sheets and let them rest for 30 minutes before baking at 300°F (150°C) for about 15 minutes.
  6. Once cooled, pair similar-sized shells, fill with ganache, and top with mini marshmallows.
