  • 3 cups fresh blackberries (plus extra for garnish)
  • ½ cup granulated sugar
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Grand Marnier (optional)
  • 1 teaspoon unflavored gelatin
  • 4 teaspoons cold water
  • 1¼ cups heavy cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla bean paste or extract
  • 1 cup plain Greek yogurt
  • Mint leaves for garnish

Instructions

  1. In a saucepan, combine blackberries, sugar, lemon juice, and optional Grand Marnier. Cook over medium heat for 5-10 minutes until softened. Allow to cool.
  2. Bloom gelatin in cold water for 5 minutes. Gently heat until dissolved.
  3. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  4. Fold dissolved gelatin into whipped cream and then mix in Greek yogurt.
  5. Layer blackberry mixture and whipped cream in serving glasses. Garnish with extra blackberries and mint.
