- 2 ½ sticks unsalted butter (room temperature)
- 1 ¼ cups superfine sugar
- 6 eggs (beaten)
- 2 cups self-rising flour (sifted)
- 2 Tbsp Irish whiskey
- For the buttercream: 1 ¼ sticks unsalted butter (softened), 4 ½ cups powdered sugar, 1 Tbsp whiskey, and 1 Tbsp milk
- For the glaze: ¼ stick butter, ½ cup heavy whipping cream, ¼ cup sugar, 2 Tbsp brown sugar, and 2 Tbsp Irish whiskey
Instructions
- 1. Preheat the oven to 350°F (175°C) and prepare a greased and floured 9-inch round baking pan.
- 2. In a mixing bowl, cream together butter and sugar until fluffy. Add beaten eggs gradually while mixing.
- 3. Sift in flour and salt; fold gently into the mixture. Stir in Irish whiskey.
- 4. Pour batter into the pan and bake for about 35 minutes until a toothpick comes out clean. Cool on a wire rack.
- 5. For the buttercream, beat softened butter and powdered sugar until smooth; add whiskey and milk to reach desired consistency.
- 6. Once the cake is cool, slice horizontally if desired, spread buttercream between layers, and assemble.
- 7. For the glaze, melt butter in a saucepan; stir in cream, sugars, and whiskey until thickened. Pour over the assembled cake.
