- 15 large pasta shells
- 1 cup fresh button or cremini mushrooms, chopped
- 1 cup whole milk ricotta cheese
- 3 cloves fresh garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 1 tsp dried Italian herbs (basil, oregano, thyme)
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and bring salted water to a boil.
- Cook pasta shells until al dente, drain, and set aside.
- In a skillet over medium heat, heat olive oil. Sauté mushrooms and garlic until softened, about 5 minutes; season with salt and pepper.
- In a bowl, mix sautéed mushrooms with ricotta, half of the Parmesan, herbs, salt, and pepper until combined.
- Generously fill each shell with the mushroom-ricotta mixture; arrange in a greased baking dish.
- In a saucepan over medium heat, combine heavy cream and remaining Parmesan until smooth; pour over the stuffed shells.
- Bake for 25 minutes until bubbly and golden brown.
