Ingredients
- 1 lb lean ground turkey
- 1/4 cup fresh parsley, chopped
- 2 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup full-fat Greek yogurt
- 1/2 cup grated cucumber (drained)
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. In a bowl, mix ground turkey, parsley, garlic, panko breadcrumbs, egg, salt, and pepper until just combined.
- 3. Form mixture into meatballs (about 1 inch) and place on the baking sheet.
- 4. Bake for 20-25 minutes until browned and cooked through (internal temp of at least 165°F).
- 5. To make tzatziki, combine yogurt, cucumber, lemon juice, salt, and pepper in a bowl until smooth.
