- 2 lbs boneless, skinless chicken thighs
- 1 cup fresh pineapple juice
- 1/2 cup low-sodium soy sauce
- 4 garlic cloves, minced
- 1/3 cup brown sugar
- 2 tbsp sesame oil
Instructions
- In a mixing bowl, whisk together pineapple juice, soy sauce, minced garlic, brown sugar, and sesame oil until combined.
- Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour (or overnight).
- Preheat your grill to medium-high heat (375°F) or broil your oven.
- Remove chicken from the marinade (discard leftover marinade) and grill for about 6-7 minutes per side until cooked through. If baking, place on a lined baking sheet and broil for about 10-12 minutes on each side.
- Let the chicken rest for five minutes before slicing to retain moisture.
