- 1 cup finely chopped onions
- 1 cup diced bell peppers (mix of red and green)
- 1 cup shredded provolone cheese
- 1/2 cup breadcrumbs (plain or Italian)
- 2 large eggs

- 1/2 tsp black pepper
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a skillet over medium heat, sauté onions and bell peppers in a little oil until tender (about 5-7 minutes).
- In a large bowl, mix ground beef, sautéed vegetables, breadcrumbs, eggs, salt, pepper, and half of the shredded cheese until just combined.
- Transfer the mixture to the prepared loaf pan, shape it into a loaf, and top with remaining cheese.
- Bake for 45-50 minutes or until internal temperature reaches at least 160°F (70°C).
