Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well.
  3. Gradually mix in flour and baking powder until just combined.
  4. In another bowl, beat cream cheese and sugar until smooth; gently fold in raspberries.
  5. Fill each cupcake liner halfway with batter, add a tablespoon of cheesecake filling on top, then cover with more batter until two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in the pan for 5 minutes before transferring to wire racks.
