Ingredients
Scale
- 16 oz cream cheese, softened
- 1 cup granulated sugar

- 1 cup pureed fresh strawberries (about 8 ripe strawberries)
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup crushed vanilla wafer cookies (for topping)
Instructions
- Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in pureed strawberries until evenly combined.
- Pour the filling over the prepared crust and bake for 50-60 minutes until set but slightly jiggly in the center.
- Turn off the oven and let cool inside for about an hour with the door ajar. Refrigerate for at least four hours or overnight for best results.
- Before serving, mix crushed cookies with melted butter if desired and sprinkle over chilled cheesecake for added crunch.
