Ingredients
- 16 oz cream cheese (softened)
- 1 cup granulated sugar
- 2 tsp instant espresso powder
- 24 ladyfingers
- 1/2 cup unsalted butter (melted)
- 1 cup brewed coffee (cooled)
- 2 tbsp unsweetened cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Crush ladyfingers into fine crumbs. Mix crumbs with melted butter.
- Press crumb mixture into the bottom of a springform pan. Bake for 10 minutes until set; let cool.
- In a bowl, beat softened cream cheese until smooth. Gradually add sugar and espresso powder until creamy.
- Dip each ladyfinger briefly in brewed coffee and layer half over the cooled crust, followed by half of the cream cheese mixture.
- Repeat layering with remaining ladyfingers and cream cheese mixture; smooth top.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set. Dust cocoa powder before serving.
