  • 5 pounds new red potatoes
  • 6 uncooked eggs
  • 1 cup finely minced sweet onion
  • 3 cups mayonnaise
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon salt
  • 1/4 cup white sugar
  • 3 tablespoons white vinegar, divided
  • 1 ½ tablespoons cider vinegar
  • 2 teaspoons celery salt
  • 1 teaspoon white pepper
  • 1 teaspoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1/3 cup canola oil

Instructions

  1. Boil the potatoes in salted water until fork-tender (30-40 minutes).
  2. Simultaneously, boil eggs with vinegar for five minutes; let them sit off heat for 15 minutes.
  3. Peel and chop eggs after cooling.
  4. In a bowl, mix mayonnaise, onion, sugar, vinegar, celery salt, white pepper, and poppy seeds.
  5. Once potatoes are cooked and cut into chunks, combine them with the oil mixture.
  6. Gently fold in the mayonnaise dressing and chopped eggs.
  7. Chill the salad before serving.
