  • 1 lb Japanese cucumber (23 cucumbers)
  • ½ tbsp kosher salt
  • 3 tbsp rice vinegar
  • ½ tbsp sugar
  • 1 tbsp light soy sauce
  • 1 tsp sesame seeds

Instructions

  1. Thinly slice the cucumbers using a knife or mandolin and place them in a large bowl. Mix with kosher salt and let rest for 5 minutes.
  2. Remove excess water by rinsing the cucumbers under cold water and squeezing until dry.
  3. In a small bowl, whisk together rice vinegar, sugar, and light soy sauce.
  4. Toss the dressing with the cucumbers and sprinkle sesame seeds on top. Serve immediately.
