Description

Jerk Shrimp & Pineapple Basil Rice is a tropical delight that brings together the bold flavors of jerk-seasoned shrimp, sweet pineapple, and fragrant basil.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp jerk seasoning
  • 1 cup jasmine rice
  • 1 cup fresh pineapple, diced
  • ½ cup fresh basil leaves, chopped
  • 1 tbsp olive oil
  • Lime juice

Instructions

  1. In a mixing bowl, combine jerk seasoning with olive oil and lime juice. Add shrimp and marinate for at least 10 minutes.
  2. Rinse jasmine rice under cold water until clear. In a pot, combine rice with water, olive oil, and salt. Bring to a boil, then cover and simmer for 15-20 minutes until water is absorbed.
  3. Meanwhile, heat a skillet over medium-high heat and sauté marinated shrimp for 2-3 minutes per side until pink and opaque.
  4. Fluff cooked rice with a fork and mix in diced pineapple, chopped basil, lime juice, and soy sauce. Gently fold in the sautéed shrimp.
  5. Serve warm with additional basil garnish if desired.
