Jerk Shrimp & Pineapple Basil Rice is a tropical delight that brings together the bold flavors of jerk-seasoned shrimp, sweet pineapple, and fragrant basil.

- 1 lb large shrimp, peeled and deveined
- 2 tbsp jerk seasoning
- 1 cup jasmine rice
- 1 cup fresh pineapple, diced
- ½ cup fresh basil leaves, chopped
- 1 tbsp olive oil
- Lime juice
Instructions
- In a mixing bowl, combine jerk seasoning with olive oil and lime juice. Add shrimp and marinate for at least 10 minutes.
- Rinse jasmine rice under cold water until clear. In a pot, combine rice with water, olive oil, and salt. Bring to a boil, then cover and simmer for 15-20 minutes until water is absorbed.
- Meanwhile, heat a skillet over medium-high heat and sauté marinated shrimp for 2-3 minutes per side until pink and opaque.
- Fluff cooked rice with a fork and mix in diced pineapple, chopped basil, lime juice, and soy sauce. Gently fold in the sautéed shrimp.
- Serve warm with additional basil garnish if desired.
