  • 1 tablespoon red wine vinegar (or balsamic)
  • 2 tablespoons olive oil
  • 1 baguette, sliced diagonally
  • Extra virgin olive oil for drizzling
  • 1/2 cup balsamic vinegar
  • 3 tablespoons brown sugar

Instructions

  1. In a mixing bowl, combine diced tomatoes, salt, garlic, basil, and black pepper. Add red wine vinegar and olive oil; mix gently. Let sit to meld flavors.
  2. In a saucepan, combine balsamic vinegar and brown sugar over medium heat. Stir until boiling; reduce heat and simmer for about 10 minutes until thickened. Remove from heat and let cool.
  3. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and drizzle with olive oil. Bake for about 5–7 minutes until golden brown.
  4. Spoon the tomato mixture onto each toasted baguette slice and drizzle with balsamic glaze before serving.
