  • 2 tablespoons gochujang
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot julienned
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche or potato sandwich buns
  • Butter for toasting

Instructions

  1. Marinate the chicken by mixing soy sauce, brown sugar, honey, gochujang, garlic, ginger, rice vinegar, and sesame oil in a bowl. Add chicken thighs and marinate for at least 15 minutes.
  2. Prepare the slaw by combining green cabbage, red cabbage, julienned carrot, mayonnaise, rice vinegar, sugar, salt, and pepper in a separate bowl.
  3. Cook the marinated chicken in a skillet over medium-high heat for about 5-7 minutes on each side until fully cooked (internal temperature of 165°F).
  4. Toast the brioche buns in a skillet with butter until golden brown.
  5. Assemble sandwiches by slicing the cooked chicken if desired and topping with the cabbage slaw before serving.
