  • 1 lb ground beef (or mix of beef and pork)
  • ½ cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp gochujang (Korean chili paste)
  • ½ cup mayonnaise
  • Honey or brown sugar
  • Sesame oil

Instructions

  1. In a mixing bowl, combine ground beef, breadcrumbs, egg, garlic, soy sauce, gochujang, sesame oil, salt, and pepper. Mix gently until just combined.
  2. Shape mixture into meatballs about 1 to 1.5 inches in diameter.
  3. Cook meatballs by baking at 400°F for 18–20 minutes or air frying at 375°F for 10–12 minutes until cooked through.
  4. Prepare the glaze by simmering soy sauce, honey, gochujang, rice vinegar, sesame oil, garlic, and ginger in a saucepan until blended.
  5. Coat the cooked meatballs in the warm glaze.
  6. For the spicy mayo dip: whisk together mayonnaise, gochujang, lime juice, honey, and garlic powder until smooth.
  7. Serve meatballs warm with the spicy mayo dip.
