  • 2 lbs lamb (shoulder or leg, cut into bite-sized pieces)
  • 3 tbsp vegetable oil
  • 2 medium onions (finely chopped)
  • 4 cloves garlic (minced)
  • 1-inch piece ginger (grated)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk (optional)
  • 2 tbsp tamarind paste
  • 1 tsp turmeric powder
  • 2 tsp cumin seeds
  • 1 tbsp ground coriander
  • 12 tsp chili powder (adjust to taste)
  • 1 tsp garam masala

Instructions

  1. In a small bowl, mix together turmeric powder, cumin seeds, ground coriander, chili powder, and garam masala.
  2. Heat vegetable oil in a heavy-bottomed pot over medium heat. Sauté onions until golden brown; then add garlic and ginger for another minute.
  3. Add lamb pieces and cook until browned on all sides. Stir in the spice mixture.
  4. Pour in diced tomatoes and bring to a simmer. If using coconut milk, add it along with tamarind paste.
  5. Cover and simmer on low heat for about 70 minutes until the lamb is tender.
