  • 2 ¼ cups water
  • Pinch of salt
  • ½ cup mayonnaise
  • ½ cup plain yogurt (Greek yogurt works well)
  • 1 tbsp lemon juice
  • 1 tbsp vinegar (white or apple cider)
  • 1 tsp sugar
  • Salt and pepper (to taste)
  • Fresh parsley, mint, or cilantro (chopped)
  • Pickled onions
  • Lemon wedges
  • Hot sauce

Instructions

  1. Marinate the lamb by mixing minced garlic, olive oil, cumin, paprika, salt, pepper, and lemon juice in a bowl. Add the lamb and let it sit for at least 15 minutes.
  2. Cook the rice by boiling water in a pot and adding the rice with a pinch of salt. Cover and simmer until water is absorbed (15-20 minutes).
  3. In a skillet over medium-high heat, brown the marinated lamb for about 10-15 minutes until tender.
  4. For the garlic sauce, mix mayonnaise, yogurt, minced garlic, lemon juice, vinegar, sugar, salt, and pepper until smooth.
  5. Assemble your dish by placing cooked rice on plates, topping with lamb, drizzling with garlic sauce, and garnishing with fresh herbs.
