  • 2 cups heavy whipping cream
  • 1 ½ teaspoons vanilla extract
  • 2 tablespoons fresh lavender (or 1 tablespoon dried)
  • 3 tablespoons sugar (plus more for topping)
  • 4 egg yolks

Instructions

  1. Infuse the cream: Heat heavy whipping cream in a saucepan until hot but not boiling. Remove from heat and mix in vanilla extract and lavender. Let steep for 30 minutes.
  2. Preheat oven to 300°F (150°C).
  3. Prepare egg mixture: In a bowl, whisk egg yolks and sugar until combined.
  4. Combine mixtures: Strain infused cream into the egg mixture gradually while whisking until smooth.
  5. Prepare ramekins: Pour custard into ramekins placed in a baking pan.
  6. Bake in water bath: Fill the pan with hot water halfway up the sides of ramekins and bake for 50-60 minutes until slightly wobbly.
  7. Cool and chill: Let cool completely, then refrigerate for at least 2 hours before serving.
  8. Caramelize topping: Just before serving, sprinkle sugar on top of each ramekin and caramelize using a blowtorch or broiler.
