  • 8 oz cream cheese
  • ½ cup unsalted butter (for frosting)
  • 3½ cups confectioners’ sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream together butter and sugars until fluffy. Add eggs one at a time and then mix in vanilla.
  3. In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to the wet mixture alternating with buttermilk. Stir in lemon zest and juice; fold in floured blueberries.
  4. Divide batter between the pans and bake for approximately 25 minutes or until a toothpick comes out clean.
  5. Let cakes cool before frosting with a mixture of cream cheese, butter, confectioners’ sugar, heavy cream, vanilla extract, and salt.
