  • 2 large eggs (room temperature)
  • ¼ cup lime juice (about 2 limes)
  • ¼ cup granulated sugar (for coating)
  • ½ cup powdered sugar (for coating)

Instructions

  1. Preheat oven to 350°F. Line baking sheets with silicone mats or parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl; set aside.
  3. In a stand mixer, cream butter and granulated sugar until light and fluffy. Add lime zest and mix.
  4. Incorporate eggs one at a time, then add lime juice and food coloring if desired.
  5. Gradually mix in the dry ingredients until just combined; chill dough if too sticky.
  6. Using a cookie scoop, roll dough balls and coat first in granulated sugar, then in powdered sugar.
