  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • A few drops of pink food coloring (optional)
  • 1/2 cup raspberry puree (for glaze)
  • 2 tbsp granulated sugar (for glaze)
  • 1 tsp cornstarch (for glaze)
  • 2 tbsp water (for glaze)
  • 1 cup whipped cream (for garnish)
  • Fresh raspberries (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and sugar in a bowl; press into the bottom of a springform pan.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in raspberry puree, heavy cream, cornstarch, vanilla extract, and optional pink food coloring until combined.
  3. Pour mixture over the crust and bake for about 60 minutes until set but slightly jiggly in the center. Let cool in the oven with the door ajar.
  4. Prepare raspberry glaze by heating raspberry puree, sugar, cornstarch, and water until thickened. Cool slightly before pouring over cooled cheesecake.
  5. Refrigerate for at least 6 hours or overnight before serving with whipped cream and fresh raspberries.
