  • 1 packet (2 1/4 tsp) unflavored gelatin
  • 1/4 cup cold water
  • 1 can (14 oz) full-fat coconut milk
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 2 large ripe mangoes (about 2 cups)
  • Fresh lime juice and zest

Instructions

  1. Bloom the gelatin by sprinkling it over cold water and let it sit for about 5 minutes.
  2. Heat half a cup of coconut milk in a saucepan until hot but not boiling. Remove from heat and whisk in the bloomed gelatin until dissolved.
  3. In a large bowl, mix the remaining coconut milk, heavy cream, sugar, vanilla extract, and salt. Add the warm coconut mixture and whisk until combined.
  4. Blend diced mangoes with lime juice and sugar until smooth.
  5. Divide the coconut mixture into serving glasses halfway and refrigerate for about two hours until slightly tacky.
  6. Spoon mango puree over the set coconut layer, then chill for at least three more hours or overnight before serving.
