  • 2 lb carrots
  • 4 tbsp butter
  • 3 tbsp maple syrup
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp pepper

Instructions

  1. In a small saucepan over medium heat, melt the butter. Stir in maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper. Whisk until combined.
  2. Preheat oven to 400°F (200°C). Peel and trim the carrots.
  3. On a baking sheet, arrange the carrots and drizzle them with most of the glaze (reserve some for later). Toss well to coat evenly.
  4. Roast for 30 to 35 minutes until tender, stirring occasionally.
  5. Serve on a platter with remaining glaze drizzled on top.
