Ingredients
- 2 lb carrots
- 4 tbsp butter
- 3 tbsp maple syrup
- 2 tbsp grainy mustard
- 1 tbsp Dijon mustard
- 1 tsp lemon juice
- ½ tsp kosher salt
- ¼ tsp pepper
Instructions
- In a small saucepan over medium heat, melt the butter. Stir in maple syrup, grainy mustard, Dijon mustard, lemon juice, kosher salt, and pepper. Whisk until combined.
- Preheat oven to 400°F (200°C). Peel and trim the carrots.
- On a baking sheet, arrange the carrots and drizzle them with most of the glaze (reserve some for later). Toss well to coat evenly.
- Roast for 30 to 35 minutes until tender, stirring occasionally.
- Serve on a platter with remaining glaze drizzled on top.
