  • ½ cup Italian breadcrumbs or blanched almond flour
  • ¾ cup yellow onion (chopped)
  • 1 large egg
  • 2 teaspoons garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Chopped cucumbers
  • Kalamata olives
  • Tzatziki sauce
  • Fresh dill
  • Lemon wedges or slices
  • Cooked rice or pearl couscous

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground turkey, breadcrumbs or almond flour, chopped onion, egg, minced garlic, salt, and pepper. Mix until just combined.
  3. Roll the mixture into approximately 16 meatballs (about 2 inches each).
  4. Place the meatballs on a baking sheet lined with parchment paper and bake for 15 minutes. For extra crispiness, broil for an additional 2–3 minutes until golden brown.
  5. Assemble your bowl with a base of cooked rice or pearl couscous topped with chopped cucumbers, tzatziki sauce, fresh dill, lemon juice, and olives.
