  • 2 tablespoons honey
  • 1 clove garlic (minced)
  • 1 medium head romaine lettuce (chopped)
  • 1 medium bell pepper (diced)
  • ½ medium red onion (diced)
  • ½ medium jicama (diced)
  • 4 medium tomatoes (diced)
  • 1 ½ cups canned black beans (drained and rinsed)
  • 4 ears corn (or frozen corn)

Instructions

  1. Prepare the dressing by whisking together lime juice, honey, garlic, cumin, salt, and both oils until blended. Set aside.
  2. Preheat oven to 400°F. Cut tortillas into strips, toss with oil and salt on a baking sheet, then bake for about 15–20 minutes until crisp.
  3. For fresh corn: Microwave ears for about 3.5 minutes; cool before cutting kernels off the cob.
  4. In a large bowl, combine chopped romaine lettuce, bell pepper, red onion, jicama, zucchini, tomatoes, corn kernels, black beans, and cilantro. Pour dressing over the top and toss gently to combine.
  5. Garnish with additional cilantro leaves if desired and serve immediately topped with crispy tortilla strips.
